Our favourite washed coffee from El Paraiso, Honduras creates the perfect foundation for a lovely natural from Cerrado Nariño, Brazil to bring a little extra brightness to the table. CAFEUNO

CAFEUNO is essentially a cooperative of smaller cooperatives. It has a centralized facility with mechanical
and shaded drying facilities and a cupping lab. CAFEUNO started in 2015 and began with a few rough years but has since seen exciting growth towards helping the under-represented producers of the El Paraiso region.

CAFEUNO was born as an innovative collaboration between a non-profit organization and small cooperatives, with the goal of creating a more sustainable way to produce and market coffee. It began with 20 cooperatives and over 1,000 members, but when an initial investment was required, only 300 producers continued. Their commitment gave strength to the project, which today consists of 11 cooperatives and 158 producers.

Williams, a fourth-generation farmer, has managed CAFEUNO since 2016, guiding members toward specialty coffee production, training, and direct connections with buyers. He believes differentiation and transparency are key to sustainability.

A major challenge in El Paraíso is the aging farmer population and limited youth involvement. CAFEUNO responded with programs for young producers, who are increasingly committed to improving quality each season, ensuring continuity and innovation.

The cooperative has a team of 7 employees, including Gisele, a certified Cinco Estrella cupper, whose role is vital in evaluating coffees, improving cup scores, and ensuring consistency. CAFEUNO is diversifying with washed, honey, and natural processes, while strengthening traceability and direct trade contracts to access specialty niches.

Looking to 2025, CAFEUNO’s goals are to:

*Increase production by 15%.
*Integrate 20 new young producers.
*Expand differentiated lots with special processes.
*Strengthen long-term buyer relationships.

DEBORA WINGLER

The Winglers are a family passionate about caring for the land. A few years ago, they embarked on their coffee journey, transforming Fazenda Pirapitinga into an Environmental Reserve in the Alto Paranaíba region, near the Pirapitinga river in Patrocínio, Minas Gerais. 

Since then, they have dedicated themselves to protecting and preserving the environment while producing specialty coffees that honour their roots.

Débora takes a thoughtful and active approach to environmental issues, ensuring the farm’s humane, efficient, and sustainable management.

Located in Cerrado Mineiro, Fazenda Pirapitinga blends the region’s stable climate with its own unique terroir. Its altitude, well-defined soil, and distinct dry and rainy seasons create ideal conditions for high-quality coffee, known for its natural sweetness, balanced acidity, and complex sensory profiles.

Fazenda Pirapitinga is home to 300 hectares of preserved native forests, where nature thrives under Debora’s care and admiration.

The Pirapitinga River flows through their land, bringing calm, beauty, and a profound responsibility: to protect the species that call it home, like the nearly extinct Pirapitinga fish and the Brazilian Merganser, a symbol of pure waters and environmental harmony.

Debora and her family are championing regenerative coffee farming by employing practices such as:

*Organic foliar fertilizers for healthy nutrition.
*Fertigation for optimized and responsibleproduction.
*Conservation of native cerrado areas surrounding all planted areas.
